Not only is this soup absolutely delicious but it is extremely easy and simple to make. Lemon chicken soup has been a favorite of ours for a long time and is our go-to meal when it’s cold out or if we are feeling a little under the weather —>(Carol has the flu right now:( ).Here is what you will need!
Ingredients:
1 whole rotisserie chicken
3 Boxes of chicken broth
1 cup of wild rice (or any rice of your choosing)
5-8 Lemons
3 Eggs
Salt and pepper
Steps:
Bring the chicken broth to a boil and then add the cup of wild rice. Let that cook for about 10 minutes.
Pull the meat off the rotisserie and roughly chop. Juice the lemons in a separate bowl, and pull out any seeds that may have fallen in.
In a separate bowl scrambled the eggs and slowly temper in some of the boiled chicken broth.
Add some salt and pepper, the lemon juice, chicken, and tempered eggs back into the pot of chicken broth and wild rice.
Stir and let simmer for about 5-10 minutes. Serve with a piece of toasted bread, a pinch of chili flakes and ENJOY.
